Nazarian College MBA student Samantha Beltran is applying what she learns in the classroom in real time — using her graduate education to launch and grow her own business.

Currently enrolled in the MBA program at the David Nazarian College of Business and Economics, Beltran recently founded Lucky Bites, a mobile catering cart offering customizable food experiences for private events. From charcuterie cups and acai bowls to desserts and interactive catering setups, the business reflects both her creative background and the strategic skills she is developing through her coursework.

“A lot of the value of the MBA comes from applying what you learn in real time,” Beltran said.

Originally from the Philippines, Beltran earned her bachelor’s degree in communications, with a focus on advertising and public relations, from Ateneo de Manila University in 2018. She began her career in creative roles, including events, social media and content development, before transitioning into business operations, accounting and compliance — a shift that highlighted the need for a stronger foundation in business.

“I felt that if I was going to pursue a master’s degree and wanted to start a business, an MBA would give me the background I needed,” she said.

Before enrolling at CSUN, Beltran completed associate degrees in business administration and management at Los Angeles Mission College. She chose Nazarian College’s MBA program to build the technical and strategic knowledge needed to pursue entrepreneurship with confidence.

That preparation became immediately relevant when she launched Lucky Bites earlier this year. After forming the LLC at the end of January, the business was operational by March.

Beltran said her MBA coursework has played a direct role in shaping how she approaches the business. One of the most impactful classes for her has been business law with professor Valerie Flugge, which provided insight into contracts, liability, compliance and risk management — all critical areas in the food and beverage industry.

“Put agreements into writing,” she said. “That was one of the biggest lessons for me.”

She added that courses in accounting, finance and strategy have helped her better understand pricing, expenses, operations and long-term planning. These concepts have guided key decisions as she builds and scales Lucky Bites.

“The program has helped me break down problems, make decisions more analytically and be more intentional about how I execute things,” Beltran said.

Beyond technical knowledge, Beltran said the MBA program has also strengthened her ability to collaborate and build professional relationships. Working alongside classmates with diverse backgrounds has expanded her perspective and created a strong support system.

“You meet people with really interesting careers and experiences,” she said. “The friendships and network you build in the MBA program are really important.”

In addition to her graduate studies and business, Beltran works full time at Certified Tile and Stone Inc., working in accounting, compliance, documentation and office operations for commercial projects. She also volunteers at her church, Victory SoCal, contributing to presentations, photography, videography and communications

Despite the demands of balancing multiple responsibilities, she said the experience has reinforced the importance of time management and discipline — skills that are essential both in the MBA program and in entrepreneurship.

For Beltran, launching Lucky Bites while pursuing her MBA has allowed her to immediately apply what she is learning in class, turning theory into practice.

The business currently focuses on private catering, offering clients customizable menus and interactive service experiences designed to feel both elevated and personal. As it continues to grow, she plans to expand its offerings, build a consistent team and secure permits for pop-ups and retail opportunities, with long-term goals of adding beverages and establishing a permanent space.

Beltran encourages other students with entrepreneurial goals to take advantage of the opportunity to build while still in school.

“If you have entrepreneurial goals, pursue them, but back them up with a strong academic foundation,” she said. “Start building while you’re in the program.”
